Baking Europe has just published The European Baking Ingredients Market Report 2022 (EBIM Report), in official association with Fedima, the European trade association representing the bakery, patisserie and confectionery ingredients manufacturers.
This high-status, industry-specific report incorporates the Fedima Annual Industry Update which is designed to unite the regulators and industry leaders influencing and instituting change across the sector, creating a central source of practical reference material.
The first volume is for manufacturing heads and focuses on some very important technical challenges facing the baking ingredients industry. Among the very interesting pieces, we find a special report on “smart farming” from Agroscope Research. CIRAD explores neglected and under-utilised crops such as quinoa in gluten-free. Also, with protein-rich foods very much in the crosshairs of discerning consumers, AZTI shares its research on alternative proteins and their respective properties when used in food products. Action on Salt considers the measures needed to reduce our salt consumption and who should have the responsibility for implementing them.
